Iyom's Authentic Nigerian Jollof Rice

What You’ll Need

  • 1 Bag of Parboiled Rice
  • 2 Cans of Crushed Tomato
  • 1 Can of Tomato Paste
  • Bell Peppers (1 Red & 1 Yellow)
  • 1 Red Onion
  • 1 Habanero Pepper
  • 1 Tsp of Fresh Rosemary
  • 1 Tb of Chicken Bouillon
  • 1 Tsp of Curry Powder
  • 1 Tsp of Nutmeg
  • Canola Oil

Instructions

  • Rinse parboiled rice and set aside.
  • Blend crushed tomatoes, tomato paste, bell peppers, onion, and habanero pepper into a smooth sauce.
  • Heat canola oil in a pot, then add the blended mixture and cook for 10–15 minutes to reduce.
  • Season with rosemary, chicken bouillon, curry powder, and nutmeg.
  • Add rice to the pot and stir until every grain is coated.
  • Pour in enough water to cover the rice, then cover tightly.
  • Cook on low heat until the rice is tender and fluffy.
  • Stir gently and serve hot.
